Bringing responsibly sourced seafood and gastronomic excellence together with Chef Tita in the Dominican Republic

 

As part of setting a standard towards responsibly sourced seafood while relying on gastronomic excellence, we hosted a dinner with over 50 guests at the Iberostar Grand Bavaro Resort in the Dominican Republic. The renowned Chef Tita, ambassador of the New Dominican Cuisine, created and led the preparation of the 6-course menu centered around Marine Stewardship Council (MSC) and Aquaculture Stewardship Council (ASC) Chain of Custody certified seafood products.

 

Promoting responsibly sourced seafood is crucial for our oceans, as 70% of the world’s fisheries are currently depleted. The pressure on oceans and fisheries continues growing given that nearly 40% of the world’s population lives within 100km of the coast and as global populations increase, the amount of seafood needed to feed everyone will increase as well. Relying on responsibly sourced seafood, such as MSC and ASC Chain of Custody certified, means supporting fisheries that have healthy fish stocks, are managed effectively and use practices that minimize environmental impact.

 

The menu created by Chef Tita included seafood like albacore tuna, New Zealand king clip, stew (sancocho) with shrimp and cod, in innovative combinations that embody the New Dominican Cuisine.

The dinner was attended by more than 50 guests including the Vice-President and Chief Sustainability Officer of Iberostar, Gloria Fluxà, the Global Sustainability Office Director, Megan Morikawa, Vice Minister of Tourism in the Dominican Republic, Fausto Fernández, President of the Hoteles del Este Association (Dominican Republic), Ernesto Veloz, President of the Dominican Gastronomy Academy, Luis Ros, representatives from other organizations, providers, clients and Iberostar employees.

 

Chef Tita did an incredible job showing the range of dishes that can be offered with certified seafood. As we work towards our goal of 100% responsibly sourced seafood by 2025, events such as this help our guests taste the benefits of certified seafood dishes.
